Moroccan meatballs in a spiced tomato sauce, with a few eggs poached on top.

Nederlands 🇳🇱

  • 500 gram kalfsgehakt
  • 1 kleine ui, gesnipperd
  • 2 teentjes knoflook, heel fijn gehakt
  • flinke bos peterselie, fijngehakt
  • 1 tl komijn
  • 1 tl paprikapoeder

  • 250 ml water

Optioneel

  • 3 à 4 eieren
  • 1 courgette, in blokjes
  • verse peterselie of koriander om te garneren

Bereiding

English 🇬🇧

A real tagine classic that works just as well in an ordinary pan with a lid. The eggs are optional, but they do finish it off.

Ingredients

For the kefta (meatballs)

  • 1 lb minced veal
  • 1 small onion, finely chopped
  • 2 cloves garlic, very finely chopped
  • a big bunch of parsley, finely chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp ras el hanout (optional, but very nice)
  • salt and pepper

For the sauce

  • 3 tbsp olive oil
  • 2 large onions, finely chopped
  • 3 cloves garlic, finely chopped
  • 4 to 5 tomatoes, finely diced
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp ras el hanout (optional, but very nice)
  • salt and pepper
  • 1 cup water

Optional

  • 3 to 4 eggs
  • 1 courgette (zucchini), diced
  • fresh parsley or coriander (cilantro) for garnish

Method

Mix all the kefta ingredients together well and roll into small balls, a bit smaller than a walnut. You now have two options: brown them first in the oven at 200°C (400°F) for 10 to 15 minutes, or drop them into the sauce raw later on. Browning gives a bit more flavour and the balls hold together better, raw gives a softer bite and saves a step. Both are fine.

Meanwhile heat the olive oil in the tagine (or a wide pan with a lid) and gently fry the onions until soft and translucent. Add the garlic, paprika, cumin and the ras el hanout if using, and fry for a minute until fragrant. Add the tomatoes along with salt, pepper and the water. Put the lid on and let the sauce simmer gently for about 15 minutes, until the tomatoes fall apart.

Place the meatballs in the sauce with enough space between them and simmer for another 15 to 20 minutes with the lid on. Raw meatballs need more like 25 minutes.

Want eggs with it? Then 10 minutes before serving, use a spoon to make little wells in the sauce between the meatballs and crack an egg into each one. Lid on and let them poach until the whites have set and the yolks are still just soft.

Sprinkle with fresh parsley or coriander and bring the tagine straight to the table. Lovely with naan bread or rice.

Tip: a squeeze of lemon juice or a spoonful of harissa stirred through the sauce makes it just that bit more exciting.

Want some veg in there? Towards the end, about 10 minutes before serving, stir a diced courgette through the sauce. It will be cooked but still have a bit of bite.
